Having a few cans of beans always comes handy when you need a quick meal. When I make Indian dishes using beans, I always use dried beans, as the flavor get better when you slow cook the beans in the spices. But a can of beans is always in my pantry for quick stir-fried kind of side dishes that you can serve as a sandwich or like this white beans on toast.

Ingredients you need for White Beans on Toast

Canned White Beans - You can use your choice of dried peas or peas, but I personally love white beans. Using canned beans just makes the process faster. Garlic - Garlic and beans goes hand in hand. It only adds flavor ad taste but also helps to digest beans for people who find it difficult. Sweet mini pepper - You can use big bell peppers too. I used the small variety, only because I had some left in the fridge. Also, the mini ones add a mild sweetness that goes very well with beans. Pesto - Adding pesto is totally optional. I like the flavor it adds. Here is my homemade pesto recipe that I make with any greens I can find. You can however skip pesto and add chili oil. Chili Flakes - If you are using chili oil, then you definitely don’t need chili flakes. Since I added pesto, I added a little bit of chili flakes for flavor and subtle heat. As you can see, the dish doesn’t call for a lot of ingredients but is packed with flavor and tastes amazing on toast.

Steps to prepare White Beans on Toast

Step 1- Finely chop garlic and slice the mini peppers. In a medium hot pan, heat a little oil and sauté the garlic and peppers for a couple of minutes. Step 2- Drain the canned beans and give it a wash in running water. Then add the beans to the pan and stir it around. Step 3- Season with salt and add chili flakes. Toss it around for 3 to 4 minutes. Step 4- Switch off the heat and mix around the pesto. Serve it warm on toast with your choice of cheese spread on it. I learned only very recently that beans on toast is a classic British breakfast. It’s filling and definitely very wholesome. You can make it more saucy by adding tomato purée and other earthy spices.
