Ingredients you need for stuffed portobello mushroom
Good quality fresh Portobello mushroom - You want superb quality mushroom that are not flat. Out of the 4 mushroom, 1 turned out flat, and it couldn’t hold the stuffing properly. So look for ones, that have deep cavity to hold the stuffings. Assorted herbs - I used a mix of fresh thyme, chives, cilantro and basil leaves. You can also use just baby spinach or any quality of fresh greens. Cherry tomatoes - Cherry tomatoes add a mild sweetness that goes very well with the taste of the mushroom. Grated Mozzarella cheese - You can use your choice of cheese. I used a small amount of grated mozzarella cheese. Eggs - Egg is optional that you can substitute with other veggies or herbs. But I wanted to add an egg to make it a high protein dish. There are so spices added except for salt and pepper and a little bit of chili flakes. The fresh herbs added an amazing flavor, and so I skipped the dried herbs and spices.
Steps to prepare
The steps are extremely easy to follow. 1- Gently clean the mushrooms with a damp paper towel to remove any dirt. Remove the stems and use a spoon to scoop out the gills from the underside of the caps to create more space for the filling. 2- Add the finely chopped herbs, season with salt, add the sliced tomatoes and also drizzle a little oil. Bake until the mushroom are softened. 3- Take it out of the oven and crack an egg in each of the mushroom. Sprinkle little grated cheese and ad freshly cracked black pepper. Place it back in the oven to cook the egg just until the white portion is cooked, and the yolk is still jammy. 4-Enjoy it plain or with a couple slices of toast.
