When it comes to comfort food, Korea offers a plethora of dishes that are both satisfying and packed with flavor. The name “mayak” (meaning “drug”) isn’t meant literally, but rather indicates how addictive these eggs are. These marinated eggs are a testament to how a few humble ingredients can create an addictive culinary experience.

Ingredients you need for Mayak Gyeran

I do believe there are various versions of the same dish, and I added what I could find at home. And now I am definitely sticking to this as I really liked how it turned out. Jammy Eggs - Jammy eggs are half boiled eggs, where the egg yolk oozes out like jam when you slice the boiled eggs. Soy Sauce - Soy sauce is the key ingredient for the marinate as it adds the umami flavor. Honey - You can add sugar too but honey not only added a subtle sweetness but also adds a mild floral flavor. Green onion - It adds as a beautiful garnish and texture too. And the mild pungent flavor from green onion adds to the taste. Garlic - Garlic helps to infuse the marinade with the robust aroma. Chilies: I added only mild spicy red chili, as I cannot eat very spicy food. But you add spicy red/green chilies too. Sesame Seeds: The crunchy texture of sesame seeds go very well in this marinade. You can add sesame oil too. 1- Finely chop green onion. I like to use more of the green parts. 2- Thinly slice the garlic and then finely chop. Don’t add grated garlic. The chopped garlic adds texture and amazing flavor. 3- I used less spicy chili. This added the subtle heat and mild sweetness too. 4- In a glass container, add equal portion of soy sauce and water. Then add honey, and all the chopped green onion, garlic and red chili. 5- If you’re adding sesame, then add that too. I skipped sesame oil, but you add that too. 6- Boil egg for exactly 6 minutes. 7- Then drop in ice water. This will stop the egg from cooking further and the yolk will stay at that perfect jammy consistency. 8- Peel the eggs and carefully drop in the marination. Let it sit in the fridge for 24 hrs for the best tasting jammy eggs. You can serve it in various different ways. But my fav is the traditional way of enjoying it with rice.
