Homemade Custard
Growing up, my Ma made custard very often loaded with fresh fruits. It is a very common Indian desserts from my generation. But it was always from store bought custard powder. I still love the taste of that custard and yes, I still make it at times. Having said that, I needed to learn how to make custard at home and not depend on that custard powder all the time. I learned to make custard a few years back and was taken by surprise at how easy it can be. With few basic ingredients and some attention to details, you can whip up creamy custard any time.

How to make Custard
In a heavy bottom pan, you add sugar and heavy cream. Place it on medium low heat and warm the heavy cream by stirring occasionally. We are just trying to dissolve the sugar. Then while you whisk, add the egg yolk, and keep whisking in medium low heat until the consistency looks thick and coats the back of the spoon. Switch off the heat and add the butter and whisk again. Strain the custard and cover by placing a clear wrap on top. PLEASE NOTE: This recipe makes a runny custard that you can drizzle on cakes, or on dessert shells. You cannot pipe this custard into donuts or eclairs. If you want a much thicker consistency than add 2 tablespoons cornstarch to the milk and sugar
How to serve the Homemade Custard
This base creamy custard can be used in several ways. Top it with some fresh fruits and meringue cookies You can use the similar custard base to prepare Crème Brulé
Keynotes for Homemade Custard
The biggest keynote to keep in mind when you are making custard is to make sure you give your complete 10 to 15 minutes attention when preparing it. When you add egg yolk, keep whisking, so the egg yolk doesn’t scramble when it hits the warm cream. Keep whisking the whole time when you warm the cream and even after adding the egg yolk, so it doesn’t get burnt at the bottom of the pan. Once the custard is done, make sure to strain for the best silky smooth texture of the custard.
How long can you store Homemade custard?
Homemade custard should be stored in a clean dry glass jar, air sealed. You can store it for 3 to 4 days max. After that it will start looking its freshness. The custard thickens a little more as it sits in the refrigerator. It’s a great condiment to make at home. Make small batches and enjoy fresh!
