Egg salad is one of my favorite and like everyone, I too love it with mayo. This once time, I didn’t have mayo but was craving the salad. I had sour cream, and so I gave it a go and instead of sliced cucumber, I grated the cucumber. The sandwich was a hit. I had casually shared it in Instagram and so many recreated the dish. Finally, after making 3 times in 2 weeks, this summer I decided to record it here. We eat sandwiches a lot and different varieties, but I never got them recorded here. Time to make that change. A regular sandwich in our house is Tuna Sandwich and when figs are in season, I always make fig chutney cheese sandwich.
Ingredients you need for this Egg And Cucumber Sandwich
Boiled eggs - Here is how I boiled eggs. I place the eggs in cold water and turn on the stove. Once the water comes to boil, I cover the pot, and let it cook for 8 minutes. Cucumber - You can use thinly sliced cucumbers too, but I like how easy it to bite the salad when the cucumber is grated and mixed with boiled eggs. Avocado - Avocado makes the filling taste creamy. You can skip avocado if you don’t have it handy. I have made it several times without avocado too. Lettuce - I love lettuce in my sandwiches and burgers. I love the crunch it adds at every bite. Sour Cream - Mayo is the obvious choice, but try sour cream. It adds a refreshing tang to the sandwich. You can also use hung yogurt if you don’t have sour cream. Salt, pepper - Salt and pepper for seasoning and do not skip the pepper here. It will taste bland with the right amount of salt and pepper. So, do taste the filling before you start making the sandwich. Although I gave measurements in the recipe card, you can definitely change it based on your taste bud.
Steps to prepare the Sandwich
1- Hard boil the eggs and once done, peel the eggs. 2- Scrape or peel the cucumber and then grate it using the big holes in a grater box. 3- Place the boiled eggs in a mixing bowl, and mash it roughly using a fork, then add the grated cucumber and mix it around. 4- Add sour cream, salt and pepper and mix it once last time. 5- Add the avocado and mash it too. 6- On the bread slice, layer the lettuce and spoon the mixture. Then cover with another slice of bread and slice the sandwich as per your liking. Enjoy the sandwich fresh! It’s very refreshing and taste best when enjoyed right away. I have used regular sandwich bread, but you can use other variety of rustic bread too.
Variations you may like with this egg salad sandwich
Also, if you like chili flakes, a tiny sprinkle of it, adds that subtle heat. I don’t always do that, as I mostly like to keep it refreshing to the palate. Another interesting twist you can give to this sandwich is my adding pickled cucumber instead of fresh. Adding some pickled veggies or pickled onion will also add a subtle punch to the sandwich.
