What you need to prepare Aam Papad?
Just 2 ingredients:
Mango PulpSugar
I keep aam papad plain so all I can taste is mango. But, you can add cardamom powder for flavor and some saffron threads for color.
Use Store bought Mango Puree
Mangoes are out of season so, I made these Aam Papad rolls using a store-bought Mango Pulp Puree. And this particular store-bought mango puree is the best I have tasted. It has just the right amount of sugar in it. I often stock up these cans so I can enjoy taste of mango even when it’s not in season. I grew up knowing mango fruit leather as Aamshotto. We never could find it in Shillong, but at every visit to Kolkata meant coming back with box full of Aamshotto. When I met Arvind, I learnt the north Indian term – Aam papad. Staying in Bay area gave us the privilege to have access to such authentic flavors from Indian stores. And once Avyan tasted Aam Papad he got hooked.
Steps to Prepare Aam Papad or Aamshotto
It’s ridiculously simple!
If you are using fresh mango, then blend the pulp with sugar to taste. Then strain it so there is no fiber or big chunks.Layer a cookie sheet with parchment paper or baking silpat. Spread the puree in super thin layer. The layer needs to be even.
Tap the cookie sheets a few times. This helps to spread the puree evenly!
Place it in the oven at 200 F and bake until it feels dry on top. Might take 3 to 4 hrs. Depending on the consistency of the puree, it can take more or less time. Once it’s dry, the sheet will easily peel off the sheet.Then slice into 1 inch thick and then roll.STORE it in an airtight container in the refrigerator.
Making fruits leather is so easy that one should never buy it. It needs barely any effort, but it does need a lot of time for the fruit pulp to dehydrate. You can prepare fruit leather following the same steps using any fruit pulps.
